Thomas Batardière biodynamically farms his 3.3ha of vines in Rablay-sur-Layon, nestled just South of the Layon river, where the soils are riverbed-rich with sands, schist, clay, and stones. Thomas finds lovely balance in the more spiritual principles of biodynamics with a pragmatic approach to winemaking - using sulfur only where absolutely necessary, and taking a real hands-off approach to vinification. Using only stainless steel during elevation accentuates the tension and lean minerality of L'Esprit Libre. Laser focused, with only a touch of underripe white fruit to break up the predominant saline character.
