A vision of the future of UK sparkling wine. A collaboration between winemaker Dan Ham and biodynamic viticulturist Hugo Stewart in Wiltshire. A lightly sparkling col fondo that's dry with a delicate fine bead and faint touch of brioche that makes it a pretty standout fizz that begs the intrigue of where this domain are headed.

Domaine des Ardoisières, Silice 2020

'Silice' is a vibrant and refreshing varietal jacquere loaded with flavors of citrus, lemon peel, and salt. A deeply nourishing balance of weight and freshness that we have on a pretty constant rotation in our fridges at home.

Nino Barraco, Grillo 2020

A little rugged intensity gives a brawny profile to this saline, nowhere-but Sicilian wine. There's something brutal, almost primitive about it, with jagged edges and blotches of fruit and minerality. Wine from another time, and that we can't wait to return to time and time again.

Lucas Rieffel, Lâcher Prise 2018

Macerated orange Gewurtztraminer yielding a highly aromatic and expressive wine. Perhaps bombastic at first if it weren't for the rich zesty acidity that keeps on punching through to deep spice.Jacapo Stigliano Hiraeth 2019

Salinity finds a home here, with that gentle minerality coating the dried-herb and leaf character that's dotted throughout the palate of the wine. Soft red fruit, comforting and light; it's name, Hiraeth, translates to "a coming home" - well suited for a wine that feels so deeply nostalgic.

L'Ostel Levant, Fioretti 2019

Glossy, plummy nose, with a lift of herbal, eucalyptus acidity. Fruit roundness feels smart and lifted. A little green herbal note carries through the finish. Plush, tasty, with a real prettiness to the fruit character.
