Fruit for the Papillon hails from the Vallon vineyard but represents an ongoing, experimental zero-sulfur project headed up by Henri dating back to
2013. Because he felt the Vallon parcel always required a bit of time before being fully expressive or characterful, he wanted to see if a wine made without sulfites would develop more readily. The curiosity paid off, as Papillon is lifted and generous, charming and fruit-forward, and still has tremendous longevity left in it.
A developed wine that stays light on its feet, with a softly perfumed nose and a real crystalline minerality on the palate. A deeply exciting wine to drink and to consider when tasted alongside the Vallons.
