We are beyond excited to have the wines of Eloi Cedó Perrelló gracing the shelves. His Sistema Vinari project based on the sun drenched island of Mallorca has been followed with a keen eye by us here at Noble for quite a while. As we search for those wines that transmit place, setting, and the imprint of the maker we can safely say Novetat Total 2021 offers that in spades. A blend of young vine callet and monte negro (grown on mineral rich red clay soils), two varieties that are indigenous to the Balearic Island.
Part de-stemmed, part whole bunch and macerating for anything between 1 week and a month in large open vats. The litre format suggests it might just be too easy too easy to sink. There’s delicacy and finesse to the purple fruit and it’s so deeply herbal it can be from no where else but the Mediterranean. There is also a gentle wild honey aroma that persists and draws you in. Lamb, fire and this wine seem like a heavenly trio to me.
