Jo Jefferies is a British fella making wine in Languedoc; he settled there after whirlwind romance and a growing fascination with the area. Working with only native varieties, Joseph doesn't fine or filter his wines and works without additions of any kind. We find the wines deeply emblematic of the area, with plenty of broad mineral content harkening back to the volcanic plateau and basalt soils the vines are planted on. Given the .increasingly warm climates in the south of France, Jo's wines show generosity but retain freshness and delicacy. A touch of rusticity underlies a brightness of acidity. Dark fruit and a little bramble and spice give immediate warmth to the profile, with density and concentration to round out the edges. A lovely wine for the colder winter months.
