After completing his oenological studies and a couple years spent as a true "vigneron de garage" Peter Gierszewski established Domaine de Thalie in 2009. The domaine includes 4.5ha of vines and an old working farm, nestled in the hills above the famous Abbey village of Cluny. Peter's been farming organically since the onset of the domaine, and takes the time to prioritise vine health and biodiversity. In the cellar, he works towards minimal interventions, relying instead on the health of his fruit. 100% gamay from a unique plot of primarily sandstone soils - a departure from the usual clay and limestone of the region. Whole bunches are carbonically macerated for two weeks before pressing and returned to stainless steel where it rests for 14 months before bottling. Peter bottles this cuvée without any additions at all.
