Morgane Seuillot and Christian Knott produce just two wines from their cellar in Mavilly-Mandelot, with fruit from 7 parcels totaling at about 3.5ha. Their oldest site is nearby Volnay
, where they farm old vines of aligoté
for their cuvée Gouttes d'Or and a tiny production of gamay
, labelled under the Coteaux Bourgignons appelation, while fruit for their main production, Haute Côtes de Beaune
Nature, comes from sites between their village and Meloisey. They're a young couple, with Morgane hailing from Burgundy
and Christian an Aussie ex-pat, who still splits his time between their domaine and Chandon de Briailles in Savigny, and the winemaking has been natural since the get-go: no additives, no sulfites. The domaine is humble and their vines farmed with the help of a few friends and Morgane's father's draft horse. On only their fifth vintage in 2020
, the wines show incredible purity and a marked capacity to age.
The Hautes-Cotes 2018
sees 20 days of maceration on the skins in concrete tank, followed by elevage in old barrels and goes without sulfuring. It shows wonderful tension despite the hot vintage, with layers of bramble and fruit and a carrying acidity.
