Right up by the border of Slovenia Dario Princic has been tending to his vines without chemicals since 1988. He seems to produce fresher, more vinous wines than some of his more extreme neighbours, all the while looking for varietal expression and sense of place. A thick-skinned grape, his Ribolla sees 25 days of skin contact, time Dario sees as necessary to coax everything from the grape. Fermented with wild yeasts, it rests three years on its lees before release, during which time it gets itself together resulting in perhaps our favourite expression of this grape
