Catherine & Gilles Vergé

Based in the south of Burgundy since the 80’s, Gilles and Catherine are firmly established as stalwarts of the natural wine movement in the area, and indeed across France.
Catherine is currently the president, and Gilles the vice president of the vigneron S.A.I.N.S. (Sans Aucun Intrant Ni Sulfites), an association that is dedicated not only to the production of wines made without additives, excessive manipulation or use of sulphur, but also to engendering a community of vignerons and consumers that act with sensitivity and care for each other and for the earth that we live on.

Working biodynamically, they farm 3 hectares of vines in Vire, Macon, planted on limestone and clay, with the vine age varying from 55 years up to 135 years for the vieilles vignes. Gilles believes in creating a natural environment in the vineyard that encourages deep root penetration, allowing the vines to make the most of their exceptional location.

Favouring slow fermentations (sometimes up to two years) the wines are allowed to rest for at least four years before going into bottle, as Gilles and Catherine believe that it is paramount that they have time to go through all natural fluctuations and bacterial changes prior to bottling.

The sites are vinified separately and the juice undergoes spontaneous fermentation with indigenous yeasts, then goes into stainless steel for the extended elevage. With no sulphur added at any stage, the wines produced are breathtakingly pure.
Deep, complex and incredibly stable, they are an exquisite representation of a true marriage of technique and terroir.
